Recipe: Buffalo Chicken Dip

Happy Sunday friends! If you live on the east coast I hope you've been able to stay dry through this "rain train" that is sweeping over our states. And no, I'm not clever enough to dub it "rain train", just heard the weather man call it that :-) Any who, if you read my link-up on Friday, you saw that I had a Christmas party to attend Friday night and had yet to make my dip. Well, today I'm here to share with you my recipe for this quick (less than 25 minutes) buffalo chicken dip that I ended up taking! 

[INGREDIENTS NEEDED]

24 oz. of chicken (You can use fresh or canned chicken. Normally I use fresh but since I was in a rush on Friday I used my dear friends over at Tyson and trusted their canned white chicken.)

16 oz. of cream cheese

3/4 cup of hot sauce

1 cup of ranch dressing

2 cups of mild cheddar cheese 

[RECIPE MAKES: around 20 servings]


[STEPS]

1) Drain 24 oz. of chicken from cans and cut/shred into small pieces. (Don't worry if you still have some pretty big pieces as they will cook down just a little bit in the pan.) Place the chicken in a medium sized sauce pan.


2) Add 3/4 cup of hot sauce into the pan with the chicken. Turn your stove on medium heat and stir until heated throughout.



3) Add 16 oz. of cream cheese into the pan and stir until completely melted. (Hint: cut your cream cheese into small chunks like I've done here to help it melt quicker!)


4) Add in 1 cup of ranch dressing and stir until blended throughout. 

5) Add 2 cups of cheddar cheese and stir continually until the cheese is completely melted. 

6) Place your buffalo chicken dip in the crock pot placed on low heat to keep warm till served.

7) Serve with chips, bread, or your favorite dipping item! Enjoy :-)

Weekend Review: Elephants, Funnel Cakes, and Friends

Happy Monday friends! I hope y'all had a beautiful weekend filled with love and joy! This past weekend went by so slow and for that I am very thankful. Friday night I hung out with the girls here at USC Aiken getting ready for their Pink Crown Classic Golf Tournament on Saturday morning. 4:30am came early on Saturday and we were all up and making our way to the golf course. I enjoyed getting to see them in action and very proud that in one day they raised a little over $6,500 for breast cancer education and awareness!

Saturday afternoon I was thankful to be granted time off from work to see my family and friends whom I had not seen since starting on the road July 9th. Since this visit was only 4 hours from home, they drove down to see me and let me tell y'all, there are not many things better than seeing your loved ones for the first time in weeks! My heart smiled all night Saturday as we shopped around downtown Aiken and then made our way one hour north to Columbia for the South Carolina State Fair. (I didn't take my purse in and my camera is too bulky for my pocket so you'll have to excuse the poor quality of iPhone pictures.)

So sad this picture quality isn't that great, but YES we rode an elephant!
I may or may not have a serious love for Zebras :-)

Five on Friday!

Sorry for the delay in writing another post! I have spent so much time trying to read other blogs and spruce mine up for y'all that I got behind in writing However, I promise to start doing better!

Y'all, fall starts this weekend! Can you believe it?!?! I am such a fall girl that it isn't even funny. Want to know why I love fall so much? Well fall contains the following: my birthday, anniversary with my wonderful boyfriend, unlimited college football, colored leaves, apple cider, brisk weather, Thanksgiving, pumpkin carving, sweater weather...I could seriously go on forever! 


[TWO]


The food here in Philly is to die for! I mean just look at that french toast above, who could not love that? My joke has been it's a good thing I'm leaving Philly Monday or else I might soon go into a food coma! 

[THREE]


Loving the fact that I got to spend the day with my sweet sorority sister (Katie) and experience the history of Philadelphia with her. Being a history minor in college I just die inside when I get to visit monuments that are so important to our country's history. Today I finally got to visit the Liberty Bell! 

[FOUR]


While I have really loved my time in the North, I am excited to get back down South on Monday! I've never been to Louisiana before but that's where my job has me headed for next week. Here's to lots of shrimp and good times :-)

And last but not least on the list today, my thankfulness for this handsome guy! Spending the past four years with him has been such a blessing and I am so lucky to have someone who supported my decision to take a year off after school to travel and challenge myself with my dream job. Thank you Josh for being the world's most amazing and supportive boyfriend <3
